Introduction The Canary Islands are one of the provinces of Spain. They are situated close to the northwest coast of Africa off the former Western Sahara and about 1.350 km from the Iberian Peninsula.
The Canary Islands belong to the legend of Atlantis, the submerged continent, made popular since Antiquity by the Greek philosopher Plato (380 B.C.).
The name "Canarias" was mentioned by Plutarc and Pliny the Elder, before the islands disappeared from the western minds until the XIVth century, when they were rediscovered by the European navigators. The Islands are blessed with a wealth of natural resources, the most notable of these being the numerous and exquisite beaches. Most of these beaches have white sand and some are completely unique in the world. Almost 60 of the 236 kilometres of Gran Canaria´s coastline consist of beaches of various descriptions, ranging from the impressive Maspalomas beach, where you can find 250 hectares of sand dunes right next to the sea, to the concealed and unspoilt beach of Güigüi, as well as the lively beach in the capital known as Las Canteras beach.
 The beaches of Canary Islands are well known for the transparency of their waters, their cleanliness and the excellent facilities which provide bathers with all they could possibly need.
Finca La Corcovada Estate Coffee was introduced to the Canary Islands in 1788 when King Carlos III issued a decree ordering the introduction of the first coffee plants to the Island. Today coffee is produced in extremely small amounts in the Valley of Agaete. The scarce production is consumed by the same farmers growing it in order to satisfy their own household consumption. The farmers have kept this tradition of consuming the coffee they produce for many generations.
The Valley of Agaete is situated in the northwestern part of the islanbd of Gran Canaria and it is where Finca La Corcovada is located. Here, the coffee shares the terrain with fruit trees like mango, oranges and papayas. Coffee harvesting occurs between June-October.
Climatic conditions The Valley of Agaete has cool and stable temperatures all year long.
The main reason for the moderate temperature and the low incidence of rainfall is the influence of the trade winds, which are generated by the Azores anticyclone.
 

Rainfall occurs on the high parts of the islands when the moisture that is carried by the trade winds condensates into clouds in the high areas, while the cold sea currents have a tempering effect on the summer temperatures. Thus, as a result of the influence of the trade winds and the ocean currents, the temperature varies between 18º and 25º Celsius. Las Palmas de Gran Canaria, the capital of Gran Canaria, recently received a distinction as the city with the best climate in the world.

Processing The coffee is processed using the natural method in which the cherry is sun-dried without removing the pulp. This creates the signature fruity taste in the cup.

Sun-Drying Our coffee is totally sun-dried. In the final stage of preparation, the coffee is hulled to remove the dried pulp and the parchment, then passes through a number of screening, grading, and hand-sorting operations in order to have it ready for export. When you taste this rare and exotic coffee, you experience several things: the perfect climatic condition to produce coffee that is present in the valley of Agaete, the rich soils, the cup quality of its 100% Typica variety, the microclimate produced by the fruit shade trees: lime mango, papaya, and oranges. The perfect combination of all these factors produces a unique coffee with a subtle acidity, delicate body, mild aroma, and fruity tones
